Chop ham and veggies and set aside. Slice avocado and set aside. Measure out cheese.
Prepare a medium or large skillet with non-stick spray, and sauté ham, veggies, and spinach for approx 2 min. Remove mixture from pan and set aside.
Re-spray pan with non-stick spray if necessary. Pour in egg beaters and cook until firm, approx. 1 min.
Place ham and veggie mix to one side of egg beaters, add avocado slices and cheese. Fold over egg beaters to form the omelet. Cook until warm through, approx 1 min.
Remove from pan, and season with salt and pepper to taste.
Add 1/2 to 1 cup berries to make a complete stage 3 breakfast.
