Vegetable Chili (Stage 2)
INGREDIENTS:
  • - 1/2 lb. chicken breast
  • - 1 lb. extra lean ground beef
  • - 3 stalks celery, chopped
  • - 1 cup chopped bell pepper
  • - 1 cup chopped onion
  • - 1 1/2 cup chopped mushrooms
  • - 1/2 cup minced parsley
  • - 2 1/2 tsp. cumin
  • - 1 1/2 tbsp. chili powder
  • - 5 cloves garlic, minced
  • - 1/4 tsp. pepper
  • - 1 1/2 tsp. oregano
  • - 1/2 tsp. crushed red pepper flakes
  • - 28 oz. can petite diced crushed tomatoes, lower sodium
  • - 6 oz. can tomato paste
  • - 6 oz. water
  • - 15 oz. can lower sodium tomato sauce

Brown chicken and beef in a large Dutch oven or soup pot. Add celery, pepper, onion, mushrooms, and parsley. Cook until vegetables begin to soften. Add seasoning, tomatoes, tomato sauce, tomato paste, and water. Mix well and simmer for at least one hour.
