- - 1½ lbs ground chicken
- - 1 Tbsp Montreal Steak Seasoning
- - 1 Tbsp fennel seeds
- - ½ cup sundried tomatoes, chopped
- - 2 Tbsp olive oil
- - 20 leaves fresh basil (10 chopped, 10 torn or whole)
- - 1 medium onion finely chopped
- - ½ tsp crushed red pepper flakes
- - 28 oz can crushed tomatoes
- - 8 oz can tomato sauce
1. Mix first 5 ingredients and mix in 10 chopped basil leaves.
2. Form into mini meatballs and bake on nonstick cookie sheet.
3. Bake 400 degrees for 10-12 minutes
4. Sauté onion and red pepper flakes. Add tomatoes, tomato sauce and 10 leaves torn or whole basil leaves and simmer 5 minutes. Add salt & pepper if desired.
5. Serve over spaghetti squash (stage 1) or whole wheat pasta (stage 7)
