Chicken Curry Salad in Whole Wheat Pita Bread (Stage 7)

If you are avoiding grains, serve this salad on a bed of mixed greens.

INGREDIENTS:
  • - 20 ounces chopped roasted skinless, boneless chicken breast
  • - 1/2 cup chopped celery
  • - 1/4 cup low-fat mayonnaise
  • - 2 tablespoons raisins
  • - 2 tablespoon chopped green onions
  • - 2 tablespoons hot mango chutney
  • - 1 teaspoon curry powder
  • - 2 Tbs fresh lemon juice
  • - 4 (6-inch)whole wheat pitas, cut in half
  • - 8 red leaf lettuce leaves

Combine the first 8 ingredients in a medium bowl. Line each pita half with a lettuce leaf. Spoon chicken mixture into each pita half.
