Caribbean Grilled Chicken (Stage 2)

Zesty, citrus-flavored, juicy chicken. Perfect for summertime grilling.

*Note: Requires chicken to marinate for at least 2 hours or up to 48 hours before cooking.

Serves: 4

INGREDIENTS:
  • - ¼ cup fresh squeezed orange juice
  • - 2 teaspoons orange peel
  • - 1 tablespoon olive oil
  • - 1 tablespoon lime juice
  • - 1 teaspoon ginger, minced
  • - 2 garlic cloves, minced
  • - ½ teaspoon hot pepper sauce
  • - ½ teaspoon minced fresh oregano

In a blender, combine all ingredients except the chicken. Pour the marinade over the chicken breasts and marinate in the refrigerator at least 2 hours or up to 48 hours. Grill the chicken for about 6 minutes per side - until no trace of pink remains.
