Black Bean Mango Salsa (Stage 6)
INGREDIENTS:
  • - 1 cup canned black beans, drained and rinsed
  • - 1 cup diced, ripe mango
  • - ½ cup diced red onion
  • - 2 Tbsp. minced garlic
  • - 2 Tbsp minced jalapenos
  • - Juice of 1 lime, fresh squeezed
  • - ¼ finely chopped fresh cilantro
  • - Pinch of finely ground black pepper

Combine all ingredients, beans through pepper and allow to chill for 30min+ to let flavors combine. Serve with homemade corn tortilla chips or use as a fresh salsa topping for lean meats!
