Eggplant Pasta Pomodoro
Why we love it: eggplant provides a thick, noodle-like consistency and absorbs the spicy, herby flavor of pomodoro well so you won’t miss the pasta or the calories!

Why we love it: its mega easy, makes great leftovers and gives you a ton of volume for a low calorie content.

Why we love it: Cauliflower deserves the wonderful reputation it has for a healthy low-carb veggie alternative (cauliflower mashed potatoes, fried rice or pizza anyone?). Here is another equally deserving way to use this great veggie for a classic comfort-food treat!
