Wilted Spinach and Radicchio Salad with Turkey Bacon, Chanterelle Mushrooms and Orange Champagne Vinaigrette (Stage 2)
INGREDIENTS:
  • -
    • 1 bag Trader Joe’s Power Greens blend or Earthbound Farms Organic Power Deep Greens blend
    • 1 head Radicchio, chopped
    • 4-5 slices Trader Joe’s Uncured Turkey Bacon, diced
    • 1 shallot, diced
    • 3 cups Chanterelle Mushrooms, sliced*
    • ¼ teaspoon salt
    • 1 Tablespoon Extra virgin olive oil
    • 2 tablespoons Trader Joe’s Orange Muscat Champagne Vinegar
  1. In a large bowl, combine Power Green blend and chopped Radicchio

  2. In a large skillet over medium-high heat, spray with non-stick cooking spray. Add bacon and shallot, cook ~3-5 minutes, stirring frequently until shallot is soft.

  3. Add mushrooms to the pan with ¼ teaspoon salt, and cook, continuing to stir until mushrooms are soft ~5-7 minutes.

  4. Remove skillet from heat, add 1 Tablespoon olive oil and Vinegar, scraping up any browned bits.

  5. Immediately pour vinaigrette over salad, toss to combine.

     

    *Note: If unable to find chanterelles Mushrooms, you can substitute any blend of porcini, portabella, or cremini
