Turkey Meat Loaf (Stage 7)
INGREDIENTS:
  • - 1 cup kamut or bran flakes cereal, crushed with fingers
  • - 2 pounds ground turkey breast
  • - 1 cup scallions, sliced
  • - 1 stalk celery, finely chopped
  • - 1 small onion, minced
  • - 3 cloves garlic, minced
  • - 1 can (6 ounce) tomato paste
  • - 1 egg
  • - 1/2 teaspoon thyme
  • - 1/2 teaspoon marjoram
  • - 1/2 teaspoon oregano
  • - 1/2 teaspoon basil
  • - 1 teaspoon sea salt
  • - 1/4 teaspoon freshly ground black pepper

Preheat oven to 400°F. Coat an 8-inch loaf pan with cooking spray. In large bowl, combine all ingredients together, mixing until completely combined. Transfer to prepared pan and bake 1 1/4 hours, or until turkey temperature reaches 165°F.
