Super-Quick Dinner Salad (Stage 2)
The beauty of this salad is that almost all of the ingredients are optional. Use prewashed lettuce as your base, and add whatever vegetables you like. It can be used as a side salad, or you can add several additional chopped veggies, along with leftover fish, chicken or shrimp to make it a meal.
INGREDIENTS:
- - 1 bag prewashed mixed salad greens or baby spinach
- - 2 Tablespoons chopped green onions or red onions
- - ½ cup Roma, cherry or other in-season tomato, chopped
- - ¼ cup Paul Newman's Own Lighten Up Balsamic Vinaigrette Dressing
Additional ideas (per 4 servings):
- - 1 16-ounce can artichoke hearts in water, drained and cut into quarters
- - Red bell pepper, cut into strips
- - Grated carrot or red cabbage
- - Sliced radishes
- - Cucumber, peeled, seeded and sliced
- - 2 Tablespoons grated Parmesan cheese
- - 5-6 oz of leftover cooked salmon, chicken, or shrimp

Place the salad greens, chopped onion and tomatoes in a large salad bowl (see list below of optional ingredients). Drizzle vinaigrette dressing on top and toss lightly. Top it off with fresh-ground black pepper, if desired.
