1. Preheat broiler
2. Place peppers, cut side down, in a large microwave safe dish. fill dish with ½ inch water, cover, and microwave on High until eppers are softened, 7-10 minutes. Drain water and place peppers on baking dish.
3. Cook ground turkey in a non-stick skillet over medium-high heat. Break up into small pieced while cooking. Cook through, about 5-10 minutes. Stir in tomatoes, mushrooms, onion, and spinach. Cook until spinach is wilted.
4. Stir 1/2 cup cheese into mixture.
