Heat oil in pan and add cumin seeds. Once they splatter, add onions and salt. Cook till onions are light brown.
Add ginger, garlic and cilantro and mix well. Add diced tomatoes.
Add the masala powders - curry, coriander and garam masala. Cook until tomato separates from skin. Remove from stove and blend the mixture.
Put the paste back in pan, along with soybeans and cauiflower, and cover with about 2 1/2 cups water. Cook until soybeans and cauliflower are cooked but not overdone. (Cauliflower should still have texture and not be too soft)
Place dish in slow cooker for added flavor.
Serve hot with tortillas (Stage 7).
