Slow Cooker Seafood Gumbo (Stage 2)
INGREDIENTS:
  • - 2 cups sliced celery
  • - 1 cup sliced onion
  • - 2 cups chopped green bell pepper
  • - 2 garlic cloves, minced
  • - 2 cups reduced sodium chicken broth
  • - 1 14-oz. can diced no-salt-added tomatoes
  • - 3 tbsp. Worcestershire sauce
  • - 2 tsp. dried thyme leaves
  • - 12 oz. large shrimp, cooked, cleaned and deveined
  • - 16 oz. fresh or canned crabmeat
  • - 1 10 oz. bag frozen okra, thawed and sliced crosswise into 1/2 inch pieces

1. Coat large skillet lightly with cooking spray, and cook celery, onion, pepper and garlic on medium heat, stirring frequently. 

2. Add cooked vegetables, broth, tomatoes, Worchestershire sauce, salt and thyme to slow cooker. 

3. COver and cook on low for 4 hours or high for 2 hours. 

4. Add shrimp, crab and okra and cook 1/2 hour. 

4. Serve over cauliflower rice if in stage 2, or brown rice if in stage 7.
