Slow-Cook White Chili (Stage 6)
INGREDIENTS:
  • - 2 15-oz cans great northern beans, drained
  • - 20 oz cooked and shredded chicken breasts
  • - 1 cup onions
  • - 1 ½ cups chopped yellow, red or green bell peppers
  • - 2 garlic cloves, minced
  • - 2 tsp cumin
  • - ½ tsp salt
  • - ½ tsp dried oregano
  • - 3 ½ cups nonfat chicken broth (2 14-oz cans)
  • - Cayenne pepper
  • - 1 tablespoon Sour cream, light
  • - ¼ cup reduced fat Mozzarella cheese

1. Combine all ingredients except cayenne pepper, sour cream and cheese in a slow cooker
2. Cover. Cook on low 8-10 hours or on high for 4-5 hours
3. Add cayenne pepper. Stir. Ladle into bowls and top individual servings with ¼ cup shredded mozzarella and 1 tablespoon lite sour cream.
