20/20 Vanilla Pumpkin Snack Bars (Stage 7)

One of Erika’s favorite quick & easy snacks! They also double as a healthy dessert option, perfect for entertaining

INGREDIENTS:
  • - 3/4 cup Almond Flour (such as Bob’s Red Mill)
  • - 2 each of 20/20 Vanilla Protein Powder Shake Packets
  • - 3/4 cup egg beaters
  • - 1/2 cup canned pure pumpkin
  • - 1 tsp. baking powder
  • - 1 teaspoon vanilla extract
  • - 1 tbsp. Cinnamon
  • - Optional: up to ¼ cup dark chocolate baking chips

Preheat oven to 350 degrees. Spray an 8 x 8 pan with nonstick baking spray.
Mix all ingredients together.
Pour batter into pan.
Bake for about 12- 18 minutes, or until a knife inserted into the center comes out clean. Store in refrigerator or wrap individual servings and freeze.
