Rosemary Balsamic Beet & Cream Cheese Crackers (Stage 7)
INGREDIENTS:
  • -
    • 1 cup pre-sliced beets
    • 12 Doctor in the Kitchen brand Flackers Rosemary flavor crackers(or similar whole grain flatbread/cracker)
    • ½ cup Kroger brand Cream Cheese and Greek Yogurt blend 
    • 3 tbsp. balsamic vinegar
    • 2 tbsp. chopped rosemary
    • 1 tbsp. olive oil
    • ½ cup chopped arugula
    • Sea salt and black pepper to taste
  1. Preheat oven to 400F. Line tray with foil and place sliced beets on tray

  2. Sprinkle 1 tbsp. water over beets and fold corners of foil to make a ‘packet’

  3. Bake for 30-45 minutes until tender

  4. Spread Greek cream cheese on crackers evenly. Layer beets, rosemary and salt/pepper evenly on top

  5. Sprinkle with arugula, balsamic and olive oil just before serving, and enjoy!
