Rosemary Balsamic Beet & Cream Cheese Crackers (Stage 7)

1 cup pre-sliced beets

12 Doctor in the Kitchen brand Flackers Rosemary flavor crackers(or similar whole grain flatbread/cracker)

½ cup Kroger brand Cream Cheese and Greek Yogurt blend

3 tbsp. balsamic vinegar

2 tbsp. chopped rosemary

1 tbsp. olive oil

½ cup chopped arugula

Sea salt and black pepper to taste

Preheat oven to 400F. Line tray with foil and place sliced beets on tray

Sprinkle 1 tbsp. water over beets and fold corners of foil to make a ‘packet’

Bake for 30-45 minutes until tender

Spread Greek cream cheese on crackers evenly. Layer beets, rosemary and salt/pepper evenly on top

Sprinkle with arugula, balsamic and olive oil just before serving, and enjoy!
