Petite Frittatas with White Cheddar and Chicken Maple Sausage (Stage 3)
INGREDIENTS:
  • - 8 links AmyLu’s Chicken Maple Sausage Links, diced
  • - 3 cups Egg Beaters
  • - 2 cups fresh Spinach, chopped
  • - ½ Roasted red pepper, finely chopped
  • - ½ cup Cabot Reduced Fat White Cheddar Cheese, finely shredded
  • - fresh ground pepper
  • - ¾ cup 0% Hi Protein Plain Greek Yogurt
  • - 2 Tbsp. fresh Chives, minced

Preheat oven to 350 and spray standard 12 cup standard size muffin tins with non-stick cooking spray. Fill each tin with an equal portion of the diced Chicken sausages, approx. ¾ of 1 small link per muffin cup. Then fill with ¼ cup egg beaters followed by spinach and red peppers. Top each with approx. 2 tsp. Shredded Cheese and a pinch of fresh ground pepper. Bake for approx. 20min or until set. Cool on rack for 5 min then top with approx. 2tsp dollop of Greek Yogurt and a pinch of chives to garnish, enjoy!  *Can be made the night prior and kept in the refrigerator overnight, reheat before eating.
