Mini Savory Chicken Meatballs (Stage 2)

Use as a quick main dish for stage 1 and serve with spaghetti squash or serve on whole wheat pasta for a stage 7 meal.

Serves: 6

INGREDIENTS:
  • - 1½ lbs ground chicken
  • - 1 Tbsp Montreal Steak Seasoning
  • - 1 Tbsp fennel seeds
  • - ½ cup sundried tomatoes, chopped
  • - 2 Tbsp olive oil
  • - 20 leaves fresh basil (10 chopped, 10 torn or whole)
  • - 1 medium onion finely chopped
  • - ½ tsp crushed red pepper flakes
  • - 28 oz can crushed tomatoes
  • - 8 oz can tomato sauce

1. Mix first 5 ingredients and mix in 10 chopped basil leaves.
2. Form into mini meatballs and bake on nonstick cookie sheet.
3. Bake 400 degrees for 10-12 minutes
4. Sauté onion and red pepper flakes. Add tomatoes, tomato sauce and 10 leaves torn or whole basil leaves and simmer 5 minutes. Add salt & pepper if desired.
5. Serve over spaghetti squash (stage 1) or whole wheat pasta (stage 7)
