Mini Pumpkin Pie Spice Mousse (Stage 7)
INGREDIENTS:

    • ½ cup cottage cheese, 1% fat
    • ¾ cup light whipped topping
    • 2 tbsp. canned pumpkin
    • 2 tbsp. almond meal (some for garnish)
    • ½ tsp. vanilla extract
    • 2 tsp. pumpkin pie spices
    
  1. Blend all ingredients in a blender or food processor, serve in ramekins or disposable 2 oz. glasses. Garnish with additional almond meal and/or pumpkin pie spices if desired
