Mediterranean-Style Bean Salad (Stage 6)

Use as a quick side dish or add mixed greens and lean protein such as Tuna to create a complete dish, no additional dressing needed!

INGREDIENTS:
  • - 14oz can Cannellini/white kidney beans (drained and rinsed)
  • - 2 red Bell Peppers, seeded and cut into lengthwise thin strips
  • - 1 cup Cherry Tomatoes, halved lengthwise
  • - 2 Tbsp Scallions, sliced thin
  • - ¼ cup fresh Parsley, minced
  • - 1 Tbsp Garlic, minced
  • - 2 Tbsp Olive Oil
  • - Juice of 1-2 Lemons, fresh squeezed
  • - Salt and Pepper to taste

Toss all ingredients together in large bowl. Let sit for 30min to combine flavors before serving.
