In a large bowl, toss the kale, Brussels sprouts, and Broccoli/Carrot slaw together. Squeeze the juice of 1 lemon and 1 Tablespoon of salt over vegetables.
Using your hands, “massage” the lemon juice and salt into the vegetables, ~2-3 minutes, similar to the action of kneading bread. This process helps break down the tough cell wells of the fibrous vegetables. The volume of the vegetables should reduce by ~1/3.
Top salad with the red onion, pear, and pecans.
Mix salad dressing ingredients together until completely blended. Toss salad with dressing and serve.
