Massaged Kale and Brussels Sprout Salad with Apple Tahini Dressing (Stage 4)
INGREDIENTS:

    • 1 bag Trader Joe’s Organic Tuscan Kale
    • 1 bag Trader Joe’s Cruciferous Crunch collection
    • 1 lemon
    • ½-1 teaspoon kosher salt
    • 1 medium Pear
    • ½ cup red onion. sliced
    • 1/3 cup toasted pecans, chopped
    • - Salad Dressing:
    • ¼ cup Trader Joe’s Tahini sauce
    • 2 Tablespoons Apple Cider Vinegar
    • 2 Tablespoon Apple Juice
    
  1. In a large bowl, toss the kale, Brussels sprouts, and Broccoli/Carrot slaw together. Squeeze the juice of 1 lemon and 1 Tablespoon of salt over vegetables.

  2. Using your hands, “massage” the lemon juice and salt into the vegetables, ~2-3 minutes, similar to the action of kneading bread. This process helps break down the tough cell wells of the fibrous vegetables. The volume of the vegetables should reduce by ~1/3.

  3. Top salad with the red onion, pear, and pecans.

  4. Mix salad dressing ingredients together until completely blended. Toss salad with dressing and serve.
