Marinated Balsamic Bean Salad (Stage 6)
INGREDIENTS:
  • - 1 cup frozen cut green beans
  • - 1 (16 ounce) can kidney beans
  • - 1 (15 ounce) can chickpeas (garbanzo beans)
  • - 1 (15 ounce) can black beans
  • - 1 cup diced red onion
  • - ½ cup balsamic vinegar
  • - ¼ cup water
  • - 2 Tablespoons Dijon mustard
  • - 1 Tablespoon olive oil
  • - 1 teaspoon dried thyme
  • - ¼ teaspoon salt
  • - ¼ teaspoon ground white pepper
  • - 2 garlic cloves, minced

1. Combine first 4 ingredients in a colander; rinse and drain.
2. Combine onion and remaining ingredients in a bowl.  Add Bean mixture, tossing gently to coat.
3. Cover and marinate in refrigerator at least 4 hours, stirring occasionally.
4. Serve with a slotted spoon.
