Lightened Up Truffle Deviled Eggs (Stage 3)
INGREDIENTS:
  • - • 12 Whole large eggs
  • - • 1 container Fromage blanc cheese
  • - • 1 Tbsp Truffle oil
  • - • 4 oz 1/3 less fat cream cheese
  • - • 1/8tsp salt
  • - • Pinch of pepper
  • - • 2 Tbsp fresh chives, minced

Hard Boil Eggs, cool and slice lengthwise in half. Remove all yolks, discard 6 of the yolks and place remaining 6 in blender/food processor. Add Fromage blanc, truffle oil and reduced fat cream cheese, S & P, blend until smooth. Pipe or scoop filling into the 24 hardboiled egg white halves then Arrange on platter and garnish with minced chives.
