Lacinato Kale Salad (Stage 2)

Optional: Top with cooked very lean protein (chicken, turkey, shrimp, etc.) and berries for a complete meal. 

INGREDIENTS:
  • - 1 oz. lacinato kale
  • - 1/2 oz. shredded carrots
  • - 1/2 oz. zucchini, julienned
  • - 1/2 oz. sugar snap peas, julienned
  • - 1/2 oz. red onion, sliced
  • - 1/2 oz. red cabbage, sliced
  • - 1/2 oz. pumpkin seeds, toasted
  • - 2 oz. edamame, shelled

1. Chop kale to desired consistency. 

2. Mix with all ingredients and desired dressing, protein and berries on the side. Enjoy!
