Holiday Stuffed Cinnamon Apples (Stage 4)
INGREDIENTS:
  • - Ingredients:
    • 5 Granny Smith apples
    • 1 Tbsp ground cinnamon
    • 1 Tbsp coconut sugar
    • 2 tsp lemon juice
    • 3 Tbsp chopped pecans
    • Pinch of salt
    Topping
    • 2 Tbsp chopped pecans, toasted
    • 2 Tbsp chopped walnuts, toasted
    • 1 Tbsp flax seeds, toasted
    • 2 tsp almond flour
    • 1.5 tsp coconut flour
    • 1 Tbsp maple syrup, Grade B
    • Pinch of salt
  1. Preheat the oven to 375 F.

  2. Cut off the tops of 4 apples.

  3. Remove the inside of the apple without breaking the peel.  Use a grapefruit spoon/spoon with edges/spoon and knife combination.

  4. Remove the skin form the remaining apples and the cut tops.  Slice/chop the tops, peeled apple and insides of scooped apples.

  5. In a bowl combine the sliced apples with pecans, cinnamon, lemon juice, coconut sugar, and salt. Fill the hollowed out apples with the mixture.  If you have extra filling, place in a small baking dish and cook in the oven alongside the stuffed apples.

  6. Placed the stuffed apples into a small roasting pan and add water to barely cover the bottom on the pan.  Cover the pan with foil and bake for about 10 minutes. 

  7. In the meantime, combine the pecans, walnuts and flax seed on a warm pan and toast for a few minutes until it begins to brown slightly.  Toss the toasted nuts in a bowl and add the almond flour, coconut flour, maple syrup and salt. Combine all ingredients until well mixed.

  8. Remove the foil, top the stuffed apples and apple bake with the topping; bake for an additional 5 minutes.

  9. Serve while hot.
