High Protein Pumpkin Custard (Stage 7)

Use as a dessert or quick snack with protein. Can be baked in custard cups or a casserole dish for a crowd. Grate fresh nutmeg on top for extra flavor!

Serves: 8

INGREDIENTS:
  • - 15 ounce canned pumpkin
  • - 4 eggs
  • - 16 ounces low fat cottage cheese
  • - 1 Tbsp stevia
  • - 1 tsp cinnamon (optional)

1. Blend all ingredients in blender or food processor for 30 seconds.
2. Pour into 8 custard cups
3. Place all cups in 1inch pan of water in oven.
4. Bake 350-375 degrees for 30-40 minutes
5. After baking grate fresh nutmeg on top.
