Grain-less Fettuccini Chicken Alfredo with Broccoli (Stage 3)

A stage 3 pasta dish! These noodles are great because you get a large portion for very little calories compared to wheat pasta. Find them in the refrigerated section of the grocery store.

INGREDIENTS:
  • - 1 package Tofu Shirataki Noodles (From QFC, Whole Foods, PCC or Uwajimaya)
  • - 6 ounces cooked chicken breast
  • - 1 wedge Laughing Cow Light Cheese
  • - 1 cup fresh or frozen broccoli
  • - Garlic powder
  • - Pepper to taste

Cut bag of Tofu Shirataki noodles and drain out water (the odor is normal, don't be alarmed). Add noodles to small pot of boiling water. Boil noodles for 3-5 minutes. While noodles are cooking, add 1 cup broccoli to microwaveable container. Add 2 Tbsp water to container, cover with lid or paper towel and heat for 2 minutes, until broccoli is tender. Next, heat 6 ounces pre-cooked chicken in microwave until warm. Remove noodles from stove and drain off water in pasta strainer. Place tofu noodles back in the pot and keep pot off the heat. Add 1 wedge of Laughing Cow cheese to pasta. Stir well until cheese is melted evenly. Add cooked broccoli and chicken to pasta. Stir again until well-combined. Sprinkle with garlic powder and pepper to taste. Enjoy!
