Ginger Lime Fish - Cod (Stage 1)

This recipe can be used with either Cod or Halibut for a delicious entrée. Serves: 4

INGREDIENTS:
  • - 1 1/3 pounds thick fish fillets, such as cod or halibut
  • - 2 teaspoons finely grated fresh ginger
  • - 1 Tablespoon low-sodium soy sauce
  • - 1/4 cup lime juice

1) Preheat oven to 375 degrees F.  Place the fillet skin side down in a baking dish.
2) Combine the ginger, soy sauce and lime juice.  Pour over the fish.  Marinate the fish for at least 30 minutes.
3) Bake for 20-25 minutes, or until the fish is opaque.
