Garbanzo Bean Salad (Stage 6)
INGREDIENTS:
  • - 2 16-ounce cans garbanzo beans (chickpeas), drained and rinsed
  • - 1/3 cup plus 2 Tablespoons fresh cilantro, chopped
  • - 1 4-ounce can chopped mild green chilies
  • - ¼ cup plain nonfat yogurt
  • - ¼ cup chopped onion
  • - 2 Tablespoons olive oil
  • - 3 garlic cloves, chopped
  • - 1 ½ teaspoons ground cumin
  • - 1 teaspoon ground coriander
  • - 1 teaspoon fresh lemon juice
  • - ¼ teaspoon turmeric

Combine all of the ingredients in a medium bowl.  Season to taste with salt and pepper.  Can be made up to six hours ahead.
