I love French toast, and during 20/20, I started experimenting with several ways of making it while staying on my meal plan.
Top french toast with a ½ cup of frozen berries, microwaved for about a minute or until warm and juicy. For fresh berries, just clean, mash and apply them liberally.
Mix 3/8 cup of egg beater with a pinch of nutmeg, vanilla and rum flavor (optional). Coat two slices of bread and place in skillet until brown. While the bread is hot, spread 1 teaspoon of peanut butter on each slice.
In another pan, cook two slices of bacon and another 3/8 cup of eggs. Add cheese to the eggs.
Another option is a Morning Start breakfast sausage instead of the bacon. (not analyzed in recipe)
Other french toast topping: ½ cup of warm unsweetened apple sauce, sprinkled with cinnamon.
