Curried Couscous (Stage 7)

For a balanced meal, try serving this with baked chicken breasts and oven roasted broccoli or cauliflower.

INGREDIENTS:
  • - 1 tsp olive oil
  • - ¼ tsp curry powder
  • - 1/8 tsp ground allspice
  • - 1 1/3 cups fat-free, low sodium chicken broth
  • - 2/3 cup uncooked whole wheat couscous

Over medium heat, place olive oil, curry and allspice in medium saucepan; cook 1 minute, stirring constantly. Add broth; bring to a boil. Stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork.
