Curried Chicken Breasts (Stage 5)

This recipe will spice up any chicken dish.

*Requires advance prep.  Chicken must marinate for at least 30 minutes before baking.

Serves: 6

INGREDIENTS:
  • - 2 pounds boneless, skinless chicken breasts
  • - ½ cup plain nonfat yogurt
  • - 3 Tablespoons lemon juice
  • - 1 Tablespoon low-sodium soy sauce
  • - 2 teaspoons curry powder

1) Preheat oven to 375 degrees F.
2) Combine yogurt, lemon juice, soy sauce and curry.
3) Pour over chicken and let sit at room temperature 30 minutes or in refrigerator for several hours.
