Cucumber Mint Raita (Stage 5)
INGREDIENTS:
  • - 1 (8-ounce) carton plain fat-free yogurt
  • - ½ cup chopped seeded peeled cucumber
  • - ½ cup chopped seeded tomato
  • - ¼ cup minced red onion
  • - 2 tablespoons chopped fresh mint
  • - ½ teaspoon ground cumin
  • - ¼ teaspoon salt

Spoon yogurt into a sieve; let stand 10 minutes then discard liquid. Scrape yogurt into a bowl using a spatula; stir in remaining ingredients. Cover and chill 2 hours; stir before serving.
