- - 1 large head of cauliflower,(leaves trimmed) broken into pieces
- - ½ cup fresh cilantro, chopped
- - Juice of ½ lime
- - 1 Tbsp. olive oil
- - 1 Tbsp. minced garlic
- - 2 Tbsp. light coconut milk, canned
- - 1/8 tsp. salt
Rinse cauliflower and dry well with paper towels. Next, ‘rice’ your cauliflower by either pulsing it in a food processor (careful not to over process into a puree) or grating it with a fine cheese grater. Heat oil in a large sauce pan over medium heat then add in cauliflower ‘rice’, chopped cilantro, lime juice and garlic. Cook until cauliflower is hot throughout, and then add 2 tbsp. light coconut milk and a pinch of salt. Let cook for an additional 2 minutes, then serve warm.
