Chicken Caesar Salad (Stage 3)

Quick and Easy Caesar Salad Recipe. Note: This salad calls for precooked chicken. It can be thrown together in 10 minutes.

Serves: 1

INGREDIENTS:
  • - 5 ounces ready-to-eat roasted, skinned, boned chicken breast, chopped
  • - 2 cups torn romaine lettuce
  • - 1 Tablespoon (1/4 ounce) grated fresh Parmesan cheese
  • - 2 Tablespoons white wine vinegar
  • - 1 Tablespoon water
  • - 1 ½ teaspoon olive oil
  • - 1 teaspoon fresh lemon juice
  • - 1/8 teaspoon black pepper
  • - 1/8 teaspoon Dijon mustard

Combine first 3 ingredients in a bowl.  Toss gently.  Combine vinegar and next 5 ingredients (vinegar through mustard).  Stir with a whisk.  Drizzle over lettuce and toss well.
