Bison Steaks with Berry Salsa (Stage 1)
INGREDIENTS:
  • - 1 package Great Range brand Bison Steak Medallions   Marinade:
  • - 2 tsp. extra virgin olive oil
  • - 2 tbsp. red wine vinegar
  • - 1 tsp. rosemary
  • - 1/4 tsp. salt
  • - 1 tsp. ground black pepper
  • - 2 tsp. minced garlic
  • - Juice of 1 lime
  • - Berry Salsa:
  • - 8 oz. blueberries
  • - 8 oz. strawberries
  • - 1/4 red onion, diced
  • - 1/2 cup cilantro
  • - 1/2 basil
  • - Juice of 1 lime

1. Mix marinade ingredients in medium bowl. Add steak, allow to marinate from 1 hr to overnight. 

2. Grill steaks about 4-5 minutes per side to desired doneness. Allow to sit for 3-5 minutes.

3. Enjoy with 1/2 cup berry salsa on top.

    Delicious!! Just made it to go with halibut. Had to substitute a few raspberries and sweet onion but great way to use my fresh herbs! Love it.
