Banana-Nut Protein Belgian Style Waffles
INGREDIENTS:
  • - 1 packet Vanilla High Protein dry powder shake
  • - 1/4 tsp baking powder
  • - Pinch of cinnamon
  • - 3 Tbsp (approx. 25g) Betty Lou's Just Good Stuff Powdered Peanut Butter
  • - 1 egg white
  • - 1 whole egg
  • - 1/4 cup Blue Diamond Almond Milk, unsweetened Vanilla variety
  • - 2-3 drops Sweet Leaf Liquid Stevia - English Toffee variety┬á

    Banana Butter

    1/4 of a medium banana, thinly sliced (approx 1/4 cup measure)
  • - 1 Tbsp pecans
  • - 2 tsp 100% real maple syrup + 2 Tbsp water
  • - Pinch of cinnamon *optional on side: 2 Tbsp 0% Vanilla Greek Yogurt (not included in nutritional count)

Sift dry ingredients together. In separate bowl, whisk whole eggs and wgg white, then stir in almond milk and liquid stevia. Combine wet and dry ingredients just until smooth. Preheat Belgian Waffle maker according to manufacturer's instructions. While waffle maker is heating, prepare banana butter by heating sliced bananas, pecan pieces, maple syrup, water and pinch of cinnamon in saute pan for 2-3 minutes over medium-high heat, tossing gently to coat banana slices and pecan pieces. Make waffles, top with banana butter and small dollop of 0% Vanilla Greek Yogurt as desired. Enjoy!
