Apple Salad with Figs & Almonds (Stage 7)
INGREDIENTS:
  • - 10 ounces apple, diced
  • - 2 ounces dried figs, chopped
  • - 4 ounces celery, diced
  • - ½ cup non-fat, plain Greek yogurt
  • - 1 tablespoon lemon juice (or juice of 1 lemon)
  • - ½ ounce slivered almonds
  • - 5 ounces carrot, grated

1. Combine apple, figs and celery in small bowl. Add yogurt and mix thoroughly. Top with almonds and grated carrots before serving. Enjoy!

    I threw this salad together this evening with the help of my handy food processor and it was GREAT! I'm giving it 5 stars because it was a unique and tasty salad, and most especially noteworthy - my teenage son took a second helping! I weighed the ingredients and came up with this count, which I will probably use next time, although I think the ingredients are forgiving if you go up or down an item:

    4 large carrots
    2 small apples (quartered for processor)
    2 1/2 stalks celery
    5 figs

    1/4 cup almonds, diced
