5 Grain-Free Comfort Meals We Love

Eggplant Pasta Pomodoro

Why we love it: eggplant provides a thick, noodle-like consistency and absorbs the spicy, herby flavor of pomodoro well so you won’t miss the pasta or the calories!


20/20 Tip: Stick with 1 tbsp. oil, and incorporate a lean ground meat of your choosing (turkey, beef, veggie, chicken or similar)

Chicken ‘Noodle’ Soup

Why we love it: its mega easy, makes great leftovers and gives you a ton of volume for a low calorie content.


20/20 Tip: Use reduced or low-sodium chicken stock, double the veggie quantity and enjoy with a sliced apple and 2 tsp. peanut butter for a complete meal!

Cauliflower Fritters

Why we love it: Cauliflower deserves the wonderful reputation it has for a healthy low-carb veggie alternative (cauliflower mashed potatoes, fried rice or pizza anyone?). Here is another equally deserving way to use this great veggie for a classic comfort-food treat! 


20/20 Tip: Use half the oil and add in a few tablespoons of broth instead to avoid excess fat, and enjoy this as a side with your favorite grilled protein and fresh berry salad.

Old Fashioned Meatloaf

Why we love it: The difference between a grain-filled meatloaf and a grain-free one is so insignificant, we happily enjoy this healthier twist on a classic entree.


20/20 Tip: Stick with 90% ground meat (beef, turkey, veggie, chicken or a mix) and use 1 tsp. salt. Enjoy with 1 ½ cups steamed veggies and berries or a small baked potato

Cold Asian Salad

Why we love it: we tend to associate low-carb noodles, like the Shirataki brand, with warm dishes such as spaghetti or pesto, but this is a fun warm-weather way to enjoy ‘pasta’.


20/20 Tip: Yield 4 vs. 6 servings to get more protein, and enjoy the salad with fresh fruit and veggies such as mandarin orange and spinach salad
