Healthy Summer Treats
Hot summer days, and long summer nights. What's not to love about July in the PNW? If you are used to capping a warm afternoon or evening with a refreshing sweet treat, but want to maintain your healthy meal plan, try these treats on for size & enjoy the best of both worlds!
1. Chocolaty-Bananas
Directions: Combine 4 mashed, ripe bananas with 3 tbsp. water, 3/4 cup unsweetened cocoa powder, 1/4 cup canola oil, 1/2 tsp. vanilla extract, 1/2 tsp. ground cinnamon and 1/4 cup finely chopped cherries. Freeze overnight (or until hard) in an ice or popsicle tray, with popsicle sticks inserted in the center of each before frozen. Enjoy!
Nutritional information: yields 6 servings, 185 calories and 3 g fat per serving
2. PB-Choc-Fro-(Greek)-Yo
Directions: Combine 1 cup non-fat, high-protein Greek yogurt (plain) with 1 container (~6 oz.) chocolate flavored yogurt plus 2 tbsp. peanut butter powder until smooth. Then freeze until hard. Enjoy!
Nutritional information: yields 1 serving, 250 calories, 3 g fat per serving
3. Angel-lic Food Trifle
Directions: Mix 1 cup non-fat ricotta cheese with 2 cups non-fat vanilla yogurt until smooth. Cut 1/2 of an angel food cake into cubes, ~1" each. Arrange angel food cake in a medium bowl. Top with 1 cup berries and 1 1/2 cup yogurt mix. Continue to layer all ingredients. Top with remaining 1/2 cup berries and 1 tbsp. light whipped topping. Enjoy!

4. Zesty-Berry-Whipped
Directions: Combine 1 cup frozen raspberries with 1 cup non-fat Greek yogurt, 1 tbsp. honey and 1 tsp. lemon juice in a food processor, until smooth. Serve immediately.
