Make your Salad Interesting

What better time to experiment with new and interesting fixes in your salad than spring/summer? Beautiful weather calls for fresh, light & quick dinners like these.

1. Spinach & Grapefruit Griller Salad:

Top spinach with grilled strips of flank steak, grilled grapefruit slices, grilled pecans & reduced-fat blue cheese

2. Seafood De-Light

Top mixed baby greens with grilled shrimp, blackberries, toasted walnuts, light goat cheese and a berry vinaigrette

3. Wedge w/a Twist

Top a wedge of romaine with this yummy canned tuna mix: canned albacore tuna, basil pesto and Greek yogurt mixed, plus red onion, cherry and sundried tomatoes & pine nuts

4. Saucy Asian/American Mix

Top shredded romaine lettuce with diced chicken, refrigerated, slivered almonds, pineapple tidbits, lower-sugar craisins, green onions and a drizzle of spicy sesame vinaigrette

A mix of any in-season fruit, greens, low-fat cheese, nuts and proteins can make for an interesting & refreshing dinner. Get daring and be pleasantly surprised with the flavor results! Enjoy!
